Roasted Cauliflower

This is my latest addiction.

Take a whole cauliflower and remove the leaves. Spray some EVO on a cookie sheet, a little on the cauliflower and bake at 400 for about half an hour until it's brown and crunchy on top. I like mine almost burnt.

Rub with some fresh garlic or sprinkle with some herbs. Filling and good! Even with the EVO it's around 105 calories and a lot of food!

    I'm a big fan of roasted cauliflower. We eat it probably once per week. I sometimes take it apart with a fork after it bakes (into smaller kernels) and then mix with parmesan or feta cheese. Oh so good .. and low in calories. YUM YUM!

    Okay! I have a great big head of cauliflower in my fridge dying to be cooked. This sounds like a yummy recipe and super easy.

Does the inside of the cauliflower become tender?
