Weekend cookathon

I spent the entire weekend cooking! It was great. I have had many ups and downs with my healthy cooking adventures over the last year. So this new inspiration for healthy cooking is such a treat for me. This weekend I made tabouleh (taboulli, not sure the spelling), which is a mediteranean bulgar cold salad, which was wonderful. The fresh herbs (mint and parsley) really made this dish super delicious. I also made egglant parmesan, which I've never had before, and I think it will be on my list of monthy meals for a long time to come, I really loved it. I also made a spaghetti squash dish, it is potatoes au gratin, but with spaghetti squash instead of pototoes. This was my first time using this squash and I am really impressed with it's texture and flavor as a carb substitute. After all this cooking and tasting, I thought I was done, then decided to do coconut chicken. Another recipe that is new to me. Lightly breaded (cornstarch/coconut) chicken tenders, I did fry them, which is not great, but next time I will bake them. I was not wanting to experiment with preparation too much because I was already hungry! But, I'm sure with a light olive oil spray, they will be great baked. Whew, that was a lot of cooking for me. None of the recipes were extravagant, and they were all a hit. All things I will make again, with a few tweaks here and there.

FFL is going great, energy levels are high, I'm down a few more ounces, which sets me ( FINALLY) just about at pre-holiday weight. I can't believe it has taken this long to loose those pesky 6-8 pounds (depending on the day!) I was impressed that I'd only gained 6 pounds over the holidays because I went a little wild with my eating. But, right before I started FFL the scale had jumped another 2 pounds ( TOM) so now, a month and a half later, I feel like I am ready to start moving my SP ticker down a few notches. Maybe by next week I'll see some movement on that thing. I don't move my ticker up when I gain, unless the gain is for more than a few months. It makes me feel better just to leave it where it is. Shows me that I can make it, with just a little extra work.

Boy, I've been eating so many veggies. Actually most of my days have been vegetarian for each meal. The all fruit for breakfast helps to get a good jump on things going in that direction. But also the cooking I did this weekend left about a week's worth of freezer meals, all vegetarian (we ate all of the coconut chicken that night). Yesterday I didn't eat any meat, and just a little bit of cheese, and I felt really great. I've been eating atleast one huge salad a day, with TONS of herbs and veggies, and veggie juice and various other fruits and veggies also. It looks like a garden in my fridge. What is nice is I've been trying things I've never had before, like the egglant and spaghetti squash, and I really love both. Egglant seems to be a really great sub for meat, and spaghetti squash is the best pasta sub I've used yet.

OK, I'm not going to go too overboard, (sorry if I already have!!) I am really happy about all the new ideas and recipes that are coming my way right now. It is a delight to cook things that I feel really good about putting into my body. Now if I can just get hubs to be as excited about all this as I am, I'll really be doing great!!

Sometimes it just feels so good to cook all day long and then NOT have to worry about meals in the near future. I usually have a pot of soup in the fridge at all times or some other batch cooked item. This past weekend and top of week it was turkey chili.
