This weekend was an awesome healthy weekend. Lots of running, exercise and Sunday Morning Spin Class! Spin class I sweated my flipping tush off and pushed myself really really hard. I maxed out every bit of energy and kept my form. I wanted to make sure I sucked out every second I could of benefit for hitting that class. The instructor was great, pumped and making sure he encouraged and coached at exactly the right moments needed. He was even a bit funny! SO, sweat calorie burning entertainment, can you ask for more?
Plus I followed my “Look up a new yummy recipe” plan and made it on Sunday!! EVERYTHING just worked this weekend. PLUS my TOM didn’t show up ~ BONUS!
For years, the only way I could choke them down brussel sprouts was steamed and loaded with butter and salt. My husband loves them steamed with nothing on them. YUCKO. So this time I lightly fluffed them in olive oil, salt, pepper and some balsamic dressing and roasted them until glazed ~ yummy little balls of heaven AND the husband liked them. Rockin Brussel Sprouts, who knew?
We had this with my healthed up version of Chicken Marsala which also turned out yummy. Tons of mushrooms and a very light sauce. Delicious. Plus a really great side whole grain rice. All just the right portions and yet satisfied. Desert was my healthed up banana bread which we always love. Made with whole wheat, applesauce and a few other healthy tweaks it is moist and has a nice brown crust. Delicious.
SO, really great weekend.
