In the effort to get those veggies in... I'm now trying to having a green salad as an accompaniment to Dinner. The dinner salad can be tossed together in mere minutes. Personal favorite right now includes romaine, spinach, mandarin oranges, walnuts, red pepper and just a little goat cheese.
Besides getting in more veggies, it also has me eating less of the main dish and possible starch.
Working out the details of pulling together the perfect dressing: lots of flavor and not too fat laden.
