Day 40 -- Every Dinner Could Include Salad

In the effort to get those veggies in... I'm now trying to having a green salad as an accompaniment to Dinner. The dinner salad can be tossed together in mere minutes. Personal favorite right now includes romaine, spinach, mandarin oranges, walnuts, red pepper and just a little goat cheese.

Besides getting in more veggies, it also has me eating less of the main dish and possible starch.

Working out the details of pulling together the perfect dressing: lots of flavor and not too fat laden.

    I have grown to love plain vinegar or lwmon as a dressing.

    I keep a Costco sized container of spring salad mix in my fridge at all times, and I eat salads, either with lunch or dinner, at least 5 times a week. Balsamic vinegar whisked to gether with a little Olive oil is one of my favorites for dressing. Some time I add a little citrus juice. emoticon

    I LOVE salads....had what I call my Kitchen Sink Salad had everything, Apple chunks, Grapes, Poached Chicken Breast, all the greens, Green pepper, Cucumber, Red Onion, Pecans and Cashews and a few golden raisins... Then for the dressing!! It took over a half hour to chow down.

What fun!!

Keep on keeping on.
