My husband just hates vegetables. I think that the only one that he likes is corn. But we need to be more healthy, and in my view, that means more vegetables. So I am adding things to our meals that he would typical never ever eat. He hates salmon, but we have been having that. He doesn't like beans (as in legumes). He is pretty much against anything that isn't pizza, fried or candy. He never complains about the meals that I have been providing, but I can tell he isn't thrilled by the way that he plays with his food and doesn't eat much. I think it is okay that he isn't eating as much...except that later he will indulge in junk food because he is still hungry. But he has lost about four pounds so something is working! I am also trying to encourage him to go for walks with me. I usually want to go two or three miles and he only wants to go one, but I go for the one anyway, just to get him to move! So tonight I made vegetable soup. Now it probably wasn't the most healthy vegetable soup that I have ever made as I used some convenience foods (such as frozen Italian vegetable mix). But it was chock full of veggies nonetheless. I added bell peppers, potatoes and a bit of orzo. I thought it was pretty delicious and I am thrilled to have the veggies. But as usual, he wasn't too excited. It's okay, I have to eat what he likes sometimes too. So at least one day this week we will have hamburgers. But tomorrow I think that we will have salmon.
