garbanzo flatbread

For those of us trying the Wheatbelly diet - I just made a great flatbread for 209 calories. This one is 1/4 cup garbanzo flour, 4 tbsp flax meal, dash of salt, pinch of guar gum and pinch of baking soda. Add enough water to form a dough, pat out as thin as possible on a sheet of greased aluminum foil and bake until browning on edges. Delicious.

I had been doing a similar recipe using almond flour instead of garbanzo. The garbanzo has a stronger flavor and maybe not as pastry-like as the almond flour, but I'm already eating plenty of nuts and need to work in some more carbs from legumes, plus it's less calories.

    That's one I haven't tried yet, but it sounds like it is worth a try.
