1st Day of My Leaky Gut Repair!

Day 1 of my Anti-Inflammatory Diet designed to repair my intestinal tract, aka: Leaky Gut Syndrome, is coming to a close. I'm off to a great start, with the exception of (as nemesis) the time of day I eat. I am determined to do better than having dinner at 8:00pm.

Breakfast: chicken sausage breakfast links with sautéed (in coconut oil) zucchini, onions, baby carrots and some strawberries on the side. All veggies & fruit were organic and it was sooooooo delicious!!! I was delightfully surprised.

Mid morning I took a walk down at the Marina. it was cold & windy. Not cold like in the New England states, but cold for California.

Lunch: Black Forest ham slices (nitrate/nitrite free) in heart of romaine leaves (lettuce wraps), raw baby carrots & celery sticks. It was so tasty and I enjoyed every bite.

Snack: small apple (of course organic).

Some dear friends dropped by and afterwards I was ready to start dinner, phone rang and our youngest son said he and his sweet family were on their way over to visit. yeah!!! He's a professional chef and agreed to make dinner for us all. Did I say YEAH!!!

Dinner: at my request he made a fabulous grilled chicken stir-fry (veggies: broccolini, celery, onion, zucchini, baby carrots, garlic, a little Bragg's apple cider vinegar, sea salt, freshly ground black pepper...oh Yeah! That was a Big Yum!!! I had a cup of fresh blueberries to end the meal. I am sooooooo thankful that I gave birth to a pro chef! lol. I watched exactly how he made the stir fry so I could duplicate it on another day. I love getting those chef secrets from him.

Well, the day has come to an end for me. It wasn't as difficult to manage the transition in eating & food prep as I thought it would be. I didn't get hungry and ate till I was satiated, and enjoyed my meals. But now my eyes are getting droopy and I think I'll go catch some much needed zzzz's. I'm going to sleep good tonight! Tomorrow begins day 2 and I know I'll be ready for it.

    Food sounds delish and to have a chef come and cook for you on your first day that's just emoticon emoticon Aren't sons wonderful emoticon I'm going to check out those "leaky" things...yes it sounds terrible emoticon
