I *love* cooking!

Had a lovely day today! Primarily because I love cooking new things and I tried four new recipes today.
1. Cranberry sauce (cranberries + maple syrup) - this was only okay to me. Didn't love the very mapley flavor of it - seemed weird in a cranberry sauce. But it was so easy.
2. The cranberry sauce was served on whole wheat pumpkin pancakes, which turned out excellent!
3. I made TVP breakfast sausage patties using a recipe on Spark Recipes that turned out really good. Healthier than using meat, certainly, and rather more vegetarian-friendly. :) (My husband is a vegetarian.)
4. And for dessert, I made oatmeal chocolate graham cracker cookies! It was a recipe for flourless oatmeal cookies where you grind up some oats in a food processor to make oat flour and then mix in the remaining oats and chips and the other usual cookie ingredients...but instead of oat flour, I ground up some chocolate graham crackers I had kicking around and used those as the "flour" (and then just decreased the sugar in the recipe) and we put chocolate chips in some, butterscotch chips in some, and left others plain since it was an experiment and we didn't know whether chips of any kind would be too much on top of what were essentially cookies containing ground-up cookies....but all varieties were all delicious! Because I replaced a lot of the butter with applesauce, they came out very moist and kind of like a nice gooey cake, so I'm thinking now that I will try the same thing with regular graham crackers, only bake it in a cake pan, use chocolate chips, frost it with marshmallow creme, and make a s'mores cake!
So it might not be a super-healthy cake. :) But I bet it would be fun to make and delicious to eat! And surely, marshmallow creme isn't as bad as, say, buttercream frosting. Right? (I'm not actually sure on that, but buttercream frosting is so terrible for you, it's just got to be less unhealthy!) So I won't feel too bad about making it. :)
Anyways, I love making healthy foods, too, and playing with recipes to make them healthier. Thus the TVP sausages and homemade cranberry sauce and whole wheat vegetable-containing pancakes! I understand when people are so busy they find it hard to make time to cook, but I'll never understand how people can just not *enjoy* cooking even when they have the time. Cooking is SO much fun!
