Today could have been a disaster. I woke up tired and grumpy. I went to work tired and grumpy. The boys at work had pizza for lunch. I thought I would be tempted but they got deep dish with sausage and pepperoni.
I DON'T LIKE PEPPERONI ON PIZZA.
It completely prevented me from wanting any pizza! If it had been plain cheese or veggies I would have CRAVED some.
I think part of it had to do with my lunch. I had a cup of low-sodium Trader Joe's tomato soup, 1.6 oz of Italian bread, 1 oz. extra sharp cheddar, 1 cup of sliced carrot "chips". It filled me up so well!
I was in a better mood after lunch, as the guys usually cheer me up because they're so funny. Plus all THREE dogs were well-behaved today, even if they were a little noisy. My co-worker Gail brought her dog Lucy in, and the boy pups (Bingley and Teddy) didn't bug her too badly.
When I got home... I took the meat out of the fridge to come to room temp, and then changed into my workout clothes to do 30DS, since I knew dinner would only take a half hour to cook. I got my 30DS DONE and started dinner (the mushroom swiss burgers from last week I never made).
I decided I would eat mine without a roll. So I had a 3 oz. 93% lean burger patty, 1 oz. swiss cheese, 1.5 oz. portobella mushrooms and 1/4 cup sliced onions along with 10 tater tots and one tbsp balsamic ketchup. Mmm.
I didn't miss the bun!
I'm also in a much better mood having exercised. Tomorrow night we're having Bean & Turkey Sausage Tostada cups. I'm not sure what the recipe is, I'm making it up! I have leftover corn tortillas that I'm going to bake in muffin tins to make shells and I'm going to stuff them with turkey sausage and smashed beans. Hope they're good! lol.
Hopefully tomorrow I will WAKE UP in a good mood instead of having to finagle myself into one. ;)
