I've been participating in a non-SparkPeople challenge, called Jump Start Bingo. It's sponsored by the Chi-Running/Chi-Walking instructor. Every day in February, we select one of 28 choices and complete that square. Some squares are exercise, some are nutrition, some are just getting a full 8 hours sleep.
Today, I was home from work with a sore throat, though the rest of me felt great. It seemed like a good day for soup, or stew. The slow-cooker was calling my name, as were the two acorn squash a friend gave to me from her produce box. (Why didn't she want the acorn squash! They are a wondrous veggie!)
Since I couldn't find a suitable slow-cooker soup or stew with acorn squash, I winged it. Quite fun, really! In order to know the exact nutrition for my tracker, of course I programmed it into SparkRecipes. Here's the link:

A generous 1-1/2 cup serving is only 202 calories, less than 3g total fat, 38g healthy carbs and over 8g fiber. Protein is just over 10g.
It was delicious with the "optional" tablespoon of raisins, which added about 28 calories.
