Breakfast: Healthy Strawberry Baked Oatmeal. Delicious! Can't believe it doesn't have butter or milk!

Lunch: Steamed Veggies with Thai sauce. SO hot...SO tasty!

Dinner: Taco Junk over Mixed Greens.

I had my cup o' beans and pound o veggies!

Oh...and a few handfuls of (the last) chocolate covered almonds, which were delightful :)

    Yes Bravelute - we call the overnight oatmeal "soakmeal!" However, I make it in a huge tupperware to feed a crowd!

Taco Junk is an old Weight Watcher's recipe...

2 cans corn, drained
2 cans diced tomatoes
2-4 cans beans of whatever kind you like
(1 pound ground beef, which I no longer use)
1 packet ranch dressing mix (I buy mine fm Azure standard so that it has no MSG)
1 packet taco seasoning
2 C salsa


I also added some V8 last night, because it was a bit thick.

Cook in crockpot low for 8 hours, or you could just microwave it, because there are no raw ingredients.

This is the recipe after I doubled it. You could cut it in half, and then freeze leftovers in single sized servings.

  The wide mouth thermous oatmeal sounds like a wonderful idea for busy Sparkers.

    Did you know you can prepare oatmeal and fruit in a wide-mouthed thermos overnight. Next morning, it's ready to eat or take to work or school or on a family outing when you have to get out early.

I threw in dried fruit like cherries (find dried without sugar. Dates are available without sugar added now, too.) and also chopped apple, with cinnamon. Then I'd pack up half an ounce of walnuts in a snack baggie to throw on top when ready to eat.

I used to eat chilli on greens all the time, with the canned salt loaded products. Do you have a good homemade recipe for the taco junk? I guess this is where I need to get creative with the spices.
