I'm back. I've been sidelined with an injured knee. It's been a challenge reconfiguring my meal plans to adjust for much less exercise, but I'm figuring it out. I'm really missing kickboxing and Zumba. But three more weeks of physical therapy and I will be good to go. (Fingers crossed!) In the meantime, here is an ode to one of my favorite foods (since going gluten free seven years ago). Enjoy!
Ode to a Spaghetti Squash
I cannot do pasta.
Your glutinous deliciousness makes me ill.
But, your carb loaded memory reflects my childhood.
Macaroni and cheese, bubbly and brown on top.
Spaghetti, long and stringy with thick tomato sauce sliding down as I wrap you round and round a fork.
But your gluten and I could not coexist,
So I left you.
The new love of my life is a bright and yellow oblong,
A SPAGHETTI SQUASH!
Just the words fill me with delight!
My fork scrapes the inside of the squash and I watch in awe
As strand after strand of lemony yellow threads mound my plate
I cannot wait.
I taste you au natural
You are delicious!
I spoon marinara sauce over you.
Tossed in with leftover chicken, broccoli and mushrooms?
It is a spaghetti miracle!
