Today, I ate a late lunch. As you might recall, on Saturday I bought some fresh (and organic!) produce, and I have been impatiently waiting to make real meals out of them. Mornings I don't have the time, but lunch on non-lab days I do!
This is my lunch today:
A grilled tuna salad sandwich made with tuna, greek yogurt, feta, and celery, cucumber, and blueberry; the remaining tuna salad stuffed lettuce wrap; oranges; and a glass of milk! This rang in at:
In those 349 calories, I packed in:
- 5 g fat
- 36 g carbs (7 g fiber)
- 40 g protein
- 765 mg potassium
- 698 mg sodium **** (yes, canned tuna has a lot of sodium)
- 44%+ DV calcium (no info available on my greek yogurt)
- 55% DV B-12
And I'm sure many more wonderful nutrients :) I am simply way too busy to track all of them!
There was SO much food there, and I thought I was eating a 500+ calorie meal. I feel fabulous :)
Edit: gosh darn it, it turned the picture!
