Cream of broccoli soup (The Plan recipe)

Over the last few days I have been experimenting with new foods and discovered I am mildly reactive to shrimp. I've had them twice in the last week and both times I was up 0.1 the next day. So I guess they are off the menu for now. Shrimp season is nearly over anyway, so not a big deal. I love the big blue shrimp that are caught locally early in the season (Oct-Dec) I wouldn't touch bagged shrimp in the supermarkets with a barge pole - the are farmed from Asia ('nuff said!)

A new favorite I have discovered is the cream of broccoli soup - it sounds a lot more intimidating that it actually was. It was easy to make and I used my immersion (stick) blender rather than the regular blender - worked like a dream! I forgot to add the avocado at the end, so I add it in chunks when it goes in the bowl.

Cream of broccoli soup with avocado

3 Tbsp butter
1/2 onion chopped
1/2 tsp celery seed
2 cups chicken broth
1/2 cups water
1/2 can coconut milk
4 cups broccoli
4 cups zucchini
1 small potato (optional)
1 avocado
1 Tbsp chipolte (I used 2 tsp Mrs Dash chipolte)
pepper, cumin and tumeric (I used 1 tsp each)

Saute onion, add coconut milk, water and broth, stir. Add the rest of the ingredients except the avocado and cook till tender. Add avocado and blend.

6-8 servings

This one is a winner! Even DH liked it.
