Cream of broccoli soup (The Plan recipe)

Over the last few days I have been experimenting with new foods and discovered I am mildly reactive to shrimp. I;ve had them twice in the last week and both times I was up 0.1 the next day. So I guess they are off the menu for now. Shrimp season is nearly over anyway, so not a big deal. I love the big blue shrimp that are caught locally early in the season (Oct-Dec) I wouldn't touch bagged shrimp in the supermarkets with a barge pole - the are farmed from Asia ('nuff said!)

A new favorite I have discovered is the cream of broccoli soup - it sounds a lot more intimidating that it actually was. It was easy to make and I used my immersion (stick) blender rather than the regular blender - worked like a dream! I forgot to add the avocado at the end, so I add it in chunks when it goes in the bowl.

Cream of broccoli soup with avocado

3 Tbsp butter
1/2 onion chopped
1/2 tsp celery seed
2 cups chicken broth
1/2 cups water
1/2 can coconut milk
4 cups broccoli
4 cups zucchini
1 small potato (optional)
1 avocado
1 Tbsp chipolte (I used 2 tsp Mrs Dash chipolte)
pepper, cumin and tumeric (I used 1 tsp each)

Saute onion, add coconut milk, water and broth, stir. Add the rest of the ingredients except the avocado and cook till tender. Add avocado and blend.

6-8 servings

This one is a winner! Even DH liked it.

    Anyone have problem with stalling? Lost six pounds and I've been same weight since day 5- now on day 9. Did the rest day yesterday- same weight again. Any suggestions? Thanks

    I learned that I am highly allergic to shrimp, which, as you know, I don't like anyway. I am still doing the digestive enzymes and am seek the weight come off. It is exciting when we can see progress forward, however small. Keep up the good work.

    That soup sounds delicious - and the sort of thing my daughter will try too (she's a fan of anything made with coconut milk!). I just need to google "chipolte" and find something similar locally.....!!! Thanks for the idea emoticon

Have you logged on to there are some awesome recipes there and they are based on WW so they are weight loss... the site is very well laid out and the recipes are good...
