Ok, I was a little disappointed last Monday - not with the food. The Scallops on the bed of Strawberry and Spinach Salad was amazing. I found myself cutting everything up into tiny bites because I didn't want the meal to end. As one of our close friends says, it was a party in my mouth! I was also happy that Monty incorporated the 2 challenges. But that also made me sad because I wasn't sure I'd see any of my other favorites for the rest of the week. And I had no leftovers for lunch.
Well, yesterday Monty made Buffalo Chicken Bites (I love those) and Parmesan Zucchini Spears (I love those too). He also made his delicious tuna salad with grapes and walnuts just so I would have something for lunch. (Thanks Honey! I appreciate the yummy food from yesterday and all the good lunches I'll have this week.)
So on with this week's challenge. I'm stepping it up because I know Mirage can handle it. Every dinner this week needs to include 1 serving of protein. That doesn't mean every meal has to be made from scratch. Wherever the meal comes from, it must include 1 serving of protein. Hey Mirage, can you do it?
WHEW! I have been spending more time in the kitchen AND loving it. D has it rough 'cause now I'm addicted to cooking healthy for her! So, I have to focus on protein in our meals for the week! Obviously, this starts tonight but when is the last night? I'm just confirming time & logistics on this one. I'm good! 1236 days ago
