so today makes one week in the thyroid supplementing, cholesterol lowering life. Can not say my energy is any much better, but I wish I had a cheap test to see how my cholesterol is doing. Am totally enjoying eating more plants and colors. I found the BEST recipe for beets....which I generally would NOT eat.
This is an alteration of one I found here at SPARK so I am NOT the original author. But, that being said, this is how I did it.
In food processor I shredded:
1 peeled raw beet
2 medium onions
2 medium carrots
1 average size cabbage
In glass measuring cup I mixed
1/2 cup apple cider vinegar
2 heaping tablespoons stevia
1 teaspoon olive oil
1 teaspoon allspice
salt and pepper to taste
put this in the microwave for a minute or until begins to boil
poured this over and mixed into the shredded veggies
put the whole mess in the microwave in a covered pyrex for 3 minutes
stirred it up and put it in the fridge (or freezer if in a hurry) to chill
I want to tell you how amazingly yummy this is! It is a great topping for a sandwich or side for anything. The entire salad turns a lovely bright purple-pink. I need to go back and find that recipe on Spark and rebuild it with the stevia instead of the brown sugar that it called for and get the calorie count. Can't be much.
