Successful Crockpot Meal and Celebratory Plans

This Crockpot Mexican Chicken is the best easy recipe I've tried in a long time:

In order to reduce the sodium (I've been over sodium 2 days in a row this week, but had been on target the whole week before) I substituted a can of low sodium tomatoes for some of the salsa and then added a T. of chili powder and a tsp of cumin. I used lower sodium black beans and no salt added corn. Next time I may try to find a low sodium salsa or make my own. My daughter, who rarely cooks, said she will make this recipe. Her husband, who usually only eats one bite of veggies per meal, and both kids liked this recipe. I ate it with brown rice, but also had tortillas for the hungrier members of the family. I sprinkled a little cheddar cheese on the kids' portions. We also had fresh unsalted green beans.

I forgot to photograph it while cooking and even when serving, so all I snapped was what was leftover:



So that recipe was definitely a success!

Natalie was sick last week and missed a couple days of school, but is back to school today. Gwen has the cough, runny nose, and no appetite today. So I'm exercising here at home rather than at the Y. Tomorrow her daddy is off work, so I'll have my personal training session in the morning. Then, since it is Natalie's 6th birthday, her daddy is going to go to school and eat lunch with her while Gwen stays with me. Tomorrow eve we have a special meal and Natalie gets to open her presents, but we still plan to go to Disney on Feb 23rd for even more celebration!!

    Nice and colorful meal! I simply rinse canned beans/corn in a strainer to get rid of added salt/and or sugar. Sorry your grandchildren were both sick :( That is good Natalie is over it and can enjoy her birthday celebrations! How wonderful to take them to Disneyland, that will be so special for their first time!! I still remember the one time Mom somehow managed to save enough to take us three kids on a road trip there -I could scarcely believe I was actually there and made the most of the day we had (we were supposed to spend a week, but Mom had to replace all four tires on her 'new' used vehicle -took our budget right out)
Happy Birthday to Natalie tomorrow and enjoy the training session -hope you are not too sore after!

    Looks delicious! I have a similar one that I make where you put the rice in the crock pot with the chicken, salsa, and beans.
