Sunday Cooking Adventures

Ok I think I am going through Blog withdrawal because this is the third blog in 3 days.

First off, I spent the day today cooking up most of those veggies i bought on Friday. Let me tell you I was in the kitchen working it for 4 hours. Woop!

Normally I have been making my zucchini, red peppers, carrots on a pan with oil and parmasan cheese. I have to admit I love it but it is starting to get repetetive. I made a batch of it anyways BUT I also tried a new recipe, which smelled delicious when cooked. I made a vegetable bake. In it I had carrots, yams, zucchini, red and orange peppers, and chicken. I poured a small amount of EVOO on it with a tiny bit of paramasean and baked mozza cheese on top. DELICIOUS! I can't wait to eat it for lunch. I made enough for 4 meals!

I also tried cooking spaghetti squash for the first time. It is very interesting. I am saving it for lunch tomorrow. I'm going to eat it with my veggies and a small amount of pasta sauce.

I also chopped up my celery, hard boiled 5 eggs and organized my fresh fruit for snacks!

I did take a day off from working out today. My arms were screaming at me from Friday, but i'll be back at it tomorrow! I will be going to the new Zumba studio for the opening day! So excited!

    I made a chicken soup that turned out blah. I'm like hit-and-miss with soups. They're either AMAAAAAAAAAAAZING or bland.
