Mexican Coleslaw/5 Minute Fish Tacos

My walking partner shared this with me. I created the recipes on Sparkrecipes, so if you try it, you can just import the nutritional info. (It's under Liz's Cookbook)

It's so easy!
1 bag coleslaw mix (toss the packet of mayo)
2-3 avocados, finely chopped/mashed
1/2 red onion, finely diced
Juice of 3 limes
Cilantro and jalepenos are optional

Toss together and chill for an hour.

I served this with fish tacos:
corn tortillas
tilapia, basa, or other mild white fish

Heat some EVOO in a pan. Add tilapia. Season with salt, pepper, paprika, and garlic powder. Put a little EVOO on top, then flip the fish. It shouldn't take more than 5 minutes to cook. Heat up your tortillas, grab your mexican coleslaw, and enjoy the best fish tacos north of the border.

    Wow! That sounds great. I could even make that with the fish tacos while camping on our bicycle trip.

I make a super simple version of cole slaw using a bag of chopped cabbage and add either poppy seed OR ranch salad dressing and shake it all up in a large container with a lid. I make cole slaw the old fashioned way too, but when I'm lazy, I just throw in salad dressing.

I've never thought of putting cilantro in cole slaw, but I love cilantro. I'll try that!
