My walking partner shared this with me. I created the recipes on Sparkrecipes, so if you try it, you can just import the nutritional info. (It's under Liz's Cookbook)
It's so easy!
1 bag coleslaw mix (toss the packet of mayo)
2-3 avocados, finely chopped/mashed
1/2 red onion, finely diced
Juice of 3 limes
Cilantro and jalepenos are optional
Toss together and chill for an hour.
I served this with fish tacos:
tilapia, basa, or other mild white fish
Heat some EVOO in a pan. Add tilapia. Season with salt, pepper, paprika, and garlic powder. Put a little EVOO on top, then flip the fish. It shouldn't take more than 5 minutes to cook. Heat up your tortillas, grab your mexican coleslaw, and enjoy the best fish tacos north of the border.
