Productive Sunday

Today because of a flooding, my work was closed. So I got a free Sunday!! This never happens so I was so excited to take advantage of it. To begin I went to the gym. It was so nice to be able to work out for over an hour and not be stressed about time constraints. I have always been able to push myself to do cardio but it is much harder to push myself to do exercises like lunges, squats and other strengthening exercises. I was proud of myself today because after my cardio I had enough time to go off to the side and do a few minutes of these exercises.

I think I get a little self conscious when I'm doing those exercises because I'm not as strong as I used to be. So I tire quickly and I get frustrated. Today, I just took my time and did a few exercises and I know tomorrow I will feel it. It's almost gratifying when you wake up in the morning and a muscle you had forgotten about is aching.

After the gym I went grocery shopping and successfully resisted the bulk candy section. I came home and started on the cooking. I wanted to make a few dishes to ensure I had healthy options for the week. Today I made chicken chili with ground chicken, onions, celery, carrots, corn, kidney beans, lentils and tomatos. Super hearty and I've got more than enough for the week. I also whipped up a batch of couscous with roasted veggies to serve the chili with. I continued onto homemade hummus made with yogurt instead of tahini and it tastes great. Finally I finished with making my weekly batch of homemade granola which I eat almost every morning.

My granola is super quick and easy and gives me a great start to my day. It has 1 ripe mashed banana, a scoop of peanut butter, some plain or vanilla yogurt, half a scoop of protein powder, cinnamon, quick oats, large flake oats, wheat bran, hemp hearts, chopped apple pieces, raisins, coconut, rice cereal, and a hint of cocoa. I bake it for a few minutes to get everything tender and it is so good with some yogurt in the morning.

I am excited about the upcoming week because there is one less thing to worry about, that is my food! I could get used to having Sundays off and prepping for the whole week. Hope everyone can find their own time to prepare healthy meals (that you actually like to eat) and feel good about it.
