30 Day Vegan Challenge - Extended!

Hi fellow Sparkers!
My 30 day vegan challenge is over today; however, I decided to extend it for another 30 days until the end of February.
Overall, I did well on the 1st leg of this 30 day challenge. Because I had a cold/flu illness for approximately 3 weeks of the challenge, I decided to extend it for another 30 days.
During the 30 day period, I noticed I didn't feel bloated after eating and I didn't have that stuffed feeling after eating a meal. It was a good feeling to feel satisfied after eating without feeling uncomfortably full. I like that feeling.
I really didn't miss the chicken and turkey that I was accustomed to eating. I had given up other meats years ago and had tried unsuccessfully to give up chicken 3 times in the past. But this time, for whatever reason, I didn't even want chicken or turkey. Amazing!
I ate lots of beans and beans by products, fruits and veggies, soy products by Morning star to replace the meat, whole grains, and lots of salads. As I mentioned before, I didn't give up my egg whites and fish. I will continue to eat those items even going forward for the next 30 day challenge.
By the way, I didn't exercise as much as I wanted due to cold/flu; however, I did lose 5 pounds.
