So I made this meal last night, chicken boobs marinated in balsamic vinegar with olive oil, asparagus drizzled with olive oil, sprinkled with salt and pepper, and all of it topped with tomatoes and olives sauteed in more balsamic and olive oil, topped with a little mozzarella.
Now, I thought this was AMAZING. I love all of the flavors in the meal. My husband on the other hand...well, he likes brats with mac and cheese, and if he had things his way, he'd never eat a vegetable.
Unfortunately for him, I've cut the catering "nice guy" act and basically said, my way or the highway. DH is a SAHD, and up until the first of the year, he had been preparing all of the meals, meaning ALL carbs and processed foods, leading to a spike in my weight. Since moving to 1st shift, I've been able to cook meals again, meaning more veggies and less breads and pastas.
Quite frankly, I'm sick of him sabotaging my lifestyle with his laziness, and this could really blow up into a huge issue. I refuse to purchase groceries for separate meals, because who can afford that? Also, it sets a poor example for our 3 boys, whom I've always been very clear about raising with a healthier diet than what we were raised on.
