I have been trying to use egg substitute rather than good old plain eggs. So far I have liked them for scrambling and for using in recipes. Why add all that cholesterol if you don't have to. Even chocolate chip cookies taste fine. Ok, maybe cookies don't really add a lot nutritionally but it sure is a nice addition to the food I eat. This morning I made a burrito with a little mozzarella cheese and guacamole and my egg beaters cooked up in the microwave. Tastes just fine and is easy and rather a healthy meal. At least it hits a lot of the protein and veggie requirements.
