In January I set out to add more cardio into my routine. I started running again. Not much, maybe ten miles all month. I was very happy to be out and running again. I also wanted to make a new recipe each month and did very well with that goal:)
For February I am adding yoga to my fitness routine. I have never done it before in a live class. I have done a few videos at home and hear very good things about the instructor at the gym. Today is the first class.
SNOW DAY yesterday! That meant it was time to fire up the oven and get my bake on:)
Sweet Potato Protein Muffins (adapted from CarrotsNCake)
1 medium sweet potato
6 dates-pitted and chopped
1 egg white
1 scoop protein powder (I used Plant Fusion)
1 tsp baking powder
Mix all and place into greased muffin pan. Bake about 40 minutes. YUMMY!
Then I made chocolate chips. The plan is to make cookies for my hubby:)
So simple and I can't remember which blog I got the recipe from...so this is not my own creation.
1/2 cup coconut oil
1 cup cocoa powder
2 Tbs honey
Place all in small pot on medium heat on stove. Stir until smooth. Place on parchment paper covered pan or plate and place into freezer until mixture hardens. Mine are still in there;)
Date Apple Butter
My hubby almost jumped for joy when I told him I found this recipe. I didn't know he was such an apple butter fan. This recipe is a keeper and is super simple. Again not sure which blog I got it from, but this recipe is not my own.
20 dates pitted and sliced in half
6 apples cored and chopped
1/2 cup honey
3 Tbs cinnamon
1/4 tsp all spice
1/4 tsp nutmeg
1 cup apple cider vinegar
Place all ingredients in crock pot. Stir well, and then cook on low about 8 hours. I let mine go 7 and it turned out perfectly. Place all ingredients in the food processor and place into glass jars. Makes three 8 oz. jar portions. This would also be a fun gift to give away:) My hubby went hunting in PA this weekend, and my gram would have loved this gift. Maybe for Easter:)
I ran out of eggs to make apple egg muffins that I would have liked to serve with these. But the sweet potato muffins were quite tasty with it.
