Slow cooker soup

I love slow cooking soups and stews. You can virtually put anything in them and the end result is a hot, steamy bowl of comfort food. Add a side of whole grain bread with a little butter spray and I am a very happy girl.
Last weekend's concoction started like always with chicken breasts and dried beans as the base. Then I added some dried vegetable seasoning, smoked paprika, a couple of chopped tomatoes, some onion powder, garlic powder and black pepper. No salt and honestly I do not miss it. I was going to throw in some egg noodles toward the end but honestly it didn't need anything else in it, it was just that good.
I just had a bowl of the soup for lunch (switching lunch and dinner today) and I am full and warm and satisfied. Dinner will be avocado tuna salad over a bed of dark leafy greens tossed in some olive oil and balsamic vinegar with some crunchy veggies on the side. I'm heading to a party tonight so I want to eat something filling before I go so I an avoid the munchy pratfalls. I did however budget for a glass of white wine.
Who said that eating clean and healthy had to be boring and bland? I love to cook!
This weekend I think I'll get both slow cookers going. I'll do soup in one and in the other I think I'll make a Mexican inspired dish that I can eat over rice. I'm also going to make some more marinara sauce because I finished the last of it earlier this week but that will simmer on the stove. I also am going to stop making excuses and make up a batch of dough so I can make a loaf of home made bread on Sunday! This $7 a loaf stuff is ridiculous and there is no guarantee that it's clean although they assure me it is. Oh AND I have my new George Foreman grill too. I'm going to be a cooking fool on Sunday.
Anyway, I'm feeling anxious to get my weekend started, can you tell? Now if I could just lose some weight I could really celebrate! Sorry I know I'm repeating myself but I'm feeling good today and I'm a bit rambly.
