Sometimes the universe nudges us if we stop & listen

I was on the hunt for brown rice shells yesterday; I wanted to make one of my fav pasta dishes, which I realized I hadn't made in forever. Perfect comfort food, too, good for this blustery winter day.

Only neither of the stores I went to carried it.

When it occurred to me that I had a spaghetti squash languishing in my fridge. Who needs pasta?

If you've ever eaten spaghetti squash you'll realize it isn't really like pasta. It's got a slightly sweet taste that can make dishes taste different. But it's cooking in my oven as we speak.

This is a dish where I tend to overindulge a bit in the pasta & while it's a healthy dish, overindulging in anything is never a good idea.

So while I'm at it I threw in the sweet potatoes that were beginning to go bad. Might as well kill 2 birds with one stone. I have a dish I've been meaning to make with them, too, only I kept being too lazy to pre bake the potatoes. The recipe actually doesn't call for it, but I have a feeling it needs it.

Sometimes the universe shows us the way, if we just stop long enough & pay attention - & if we don't, the universe has other ways to get our attention - not in a good way, usually.

    That reminds me that I haven't had spaghetti squash in forever. Maybe I'll pick one up this weekend.

    Love it Judy! I'm not crazy about spaghetti squash myself but it does allow the hungry girl in us to go crazy without consequences. Now, sweet potatoes...that's another story. I love them waytoo much. I often nuke bake them and then freeze portions for multi-use. Enjoy your comfort foods!

    I put the spaghetti squash in the microwave for 8-9 minutes, face down in water. A little salt is all it needs...mmmmm
