It did not start out that way, but it ended that way. That's the problem with baking and me. I always have to sample what I bake and I had to do some gluten free baking for Hubby. Some people can have a sample of something and move on. Not me. I am related to the person who always loses the "bet you can't eat just one" dare. First I mixed up some cornbread and had it in the oven then mixed up something called cream puff on the stove and got it ready for the oven.
When the cornbread came out, of course I had to sample it. Oh, not just a bite. A whole piece! I can't believe I ate the whole piece. And with butter and honey on it. Then the cream puff thing was done. No, I did not make a dessert out of it. The idea was to make it, cut it in half, and fill it later with barbecued beef for Hubby. I ended up eating two of those -- with butter on them.
For dinner tonight, Hubby got three halves filled with BBQ beef. I had one at supper -- and one after. A snack, of course, you see. Gotta have a snack. So, you might say, it was a high carb and a high fat day. One good thing about it--I did get some protein from the beef and had a protein drink for breakfast.
What did I learn from this? Me and baking always adds up to a bunch of high carbs. Oh, and on these kinds of days, I go over my calorie count. Always over. Must have been the raisin bran and almond milk, huh?
