I've been MIA for about 10 days. I have been tracking my food but that's about all the Sparking I had been doing. I had a bad cycle of back, shoulder and neck spasms that put me out of commission for a while. I spent about 5 days pretty much out of it while taking pain meds and muscle relaxers around the clock to get it worked out. But...I am all back to normal! Woohoo! I have been back to work and still tracking but I was so backed up with my "regular" daily life that I just didn't feel like blogging, reading, commenting, etc. It hadn't been a bad thing. I am going to share the good things that came from it. Because I was trying to get rest and heal I spent a lot of time prepping and preparing veggies and healthy snacks for the week. I also spent a good deal of time making some very hearty and healthy meals. Saturday I made Turkey Stuffed Rainbow Peppers. Yum. Sunday I made a Marsala Pot Roast with mushrooms, carrots and baby yukon potatoes. Both meals were just from tweaking some of our favorite comfort foods and I was pleased to see that I can still cook flavorful comfort food and keep it healthy. After catching the kitchen cooking bug, I decided to try out a Spark Recipe. I had everything on hand to make the Easy Whole Wheat Flatbread. I can tell you, it's super easy and very yumtastic! I keep coming up with things to do with it. Spread hummus on it for a snack, spread almond butter and apple slices and fold it in half for a breakfast, make a pizza, cut in half and use it as a pita pocket for tuna. The posibilities are endless! I have a feeling that I'll be making a lot more of those delicious flats to freeze so I always have them on hand! I have even thought about how to make them with a little variety, like adding garlic and thyme in place of the parsley. I could use it for a nice pizza crust. I think it will bring out the flavor of tomato slices, spinach, and other veggies! Oh... And I learned that I like V8! I tried it in the past and did not like it. Fast forward about 10 years, add one open to trying new things me, and there you go. Low Sodium V8 is fabulous! haha OH... And even better... I got on the scale today and was estatic to see that I am now at the lowest weight I have been at in over 8 years. Go me! It's been a great week! I can not only feel the weight coming off, I can see it, and I can measure it! woohoo! That's about all I should spew out in one blog so... Happy Sparking!
