Breakfast was a wrap made with vegetable-tofu scramble, Daiya cheese, and Tofurky sausage--and coffee w/ Silk creamer. Don't judge it, but you can see the paw of one of my cats to the right of the plate, sneaking perilously close!
Midmorning I had a green lemonade. I'm lucky to have a Vita-Mix, just a blend of red grapes, a lemon [rind and all!], spinach, and a little water. It's seriously great---I should have this every day.
Not a very appetizing pic, but trust me, it was fabulous!
Lunch was a bowl of Greek lentil soup and a couple of collard wraps. [the wraps contain baked tofu, carrots, red peppers, onions]
Then I had a little bowl of blueberries and a kamut 'rice' cake w/ almond butter.
Dinner was a slice of vegan deep dish pizza!
That's it for the day!
