Breakfast musings - potatoes

Potatoes. We rarely had potatoes with our hot breakfasts while I was growing up. I have no idea why, as we had potatoes in the house, and used them for dinner several times a week.

But as an adult, I grew to rely on potatoes. They are inexpensive, easy to bake/roast/fry/boil. And the seasonings are simple, abundant, and reliable. So, on the weekends, we usually have potatoes with one breakfast. I prefer the roasted potatoes, as they are the easiest to fix for breakfast. I love hash browns, but cannot seem to duplicate the wonderful hash browns that I have experienced outside my home. I seem to lack an essential understanding about hash browns. Oh, well. That is why I will live to a ripe old age. I need to learn more stuff!
