I just realized that tomorrow marks 1 month vegan for me.
Now that’s not to say I haven’t messed up and accidentally eaten some things without knowing they weren’t vegan but I have put in a great effort. I feel much, much healthier. I have been eating so many more whole foods, and have a lot more energy. The only downside is the need to cook constantly. I try to curb it by making massive meals then eating the leftovers for lunch as well. A major up is that it seems like I eat SO MUCH food and don’t go over my calorie ranges. I am stilling hitting all of my protein and fat needs easily and so this is definitely a great move for me.
Some surprising things that I learned:
I don’t miss cheese. At all. In fact I had a tiny bit last week while eating out and it was not appealing.
Pizza tastes delicious without cheese. And loaded with veggies. Bonus if you add an interesting pizza sauce underneath!
Oreos are vegan (haha maybe not the healthiest of revelations…)
I thought it would be impossible to eat out. It’s not! You just have to get a bit creative with their menu haha. I even ate at work where they sell burgers and fries by ordering a salad with salsa as the dressing.
Tofurky beer sausage is awesome.
Coconut milk in a can can be made into whipped cream by opening the bottom of the can (so you can get at the solid stuff), draining the liquid, and whipping it up. Delicious and much better!
Vegenaise = awesome. Same with Earth Balance.
I have gotten a whole lot more adventurous with recipes I make and the food I try.
Cauliflower breaded , covered in hot sauce, and baked tastes suspiciously like delicious hot wings (even my meat-eating coworkers all asked for the recipe).
For me this has been an adventure! And one that I will definitely continue. It is working much too well to stop now!
