It is the end of the month and I have very little food in the house, I have nothing in the fridge, and when I say nothing I mean I have condiments and 2 tomatoes- nothing! I have enough to get through lunch and dinner until Sunday when I get money, but breakfast is another story, so I needed to come up with a solution... Luckily I had quinoa so I made Breakfast Quinoa this morning and it was amazing!!!
1/2c coconut milk
1tsp vanilla extract
1 tbsp. cinnamon
1 tbsp. lemon juice
2 tbsp. sugar
Rinse quinoa, bring water, coconut milk, vanilla, nutmeg, cinnamon and lemon juice to a boil in a pan with a tight fitting lid- turn down heat and let simmer for 16 minutes.
Take off heat (keep covered) for 5 minutes.
Fluff with fork, stir in sugar and raisins, enjoy!
