I just might be getting the hang of this.
As you know I HATE eating meals with no hot food, especially on cold days. I had dreaded today. No hot food except for egg whites for breakfast. The weather forecast says today's high will be in the low 30's. I think that's cold.
Soup for lunch just sounded so good, and I was none too enthusiastic about today's snack, so I checked out the soup supply in the pantry. Progresso Vegetable Classics: Minestrone. Perfect. I unchecked the snack boxes and put in the minestrone soup. The calorie count was basically the same. I opened the can and put it on to heat.
Hummus and cheese sandwich. I like cheese, and I like hummus. Too bad it's cold.
I sprayed the griddle with some Emeril butter flavored spray. I loaded the bread with the hummus and put the cheese on top. Voila. Grilled hummus and cheese. It was delicious, and it was perfect with the soup.
Now I am sitting here with a cup of tea - no sugar. This is a new behavior for me, and I am out of my beloved peppermint tea, so I am just drinking plain old tea. I am missing the sugar, but I can live without it.
We had intended to only eat the Spark Menu this week, but as I am planning next week's grocery list I notice I'm using the Spark Menu a lot more. I'm just swapping out some of the main dishes with recipes I have in the freezer.
I know there are a lot of people out there trying to lose weight that don't like to cook. The cold meals are easy to fix, and they are very fast. I love to cook. I am retired, and I have time to cook, so I really enjoy cooking.
You can just about bet there won't be any cold meals on our table next week.
