Day 29, The Plan day 11, vegetable timbale

Tomorrow is weigh-in day, the 31st - the end of the 30 day challenge. Maybe I celebrate with my first cup of coffee for the new year??

Yesterday we had a bit of an upset as we lost our DirectTv. Apparently it is illegal for DirectTv to broadcast outside of the US and the guy who handles our account (and about 80-100 others) had been reported, so DirectTV cut off the accounts.
Now I don't mind not having tv, it's a habit easily got into and also easily broken, still we had gotten used to watching certain favorite shows and now we have to try and catch up in some other way or just leave it. I think DH was more upset by it than I was and he went into his "fix-it" mode (guys always have to "fix" it!) He signed up with Hulu and is researching what else we can do.

I see it as an opportunity to get more reading done!

Meals for the day:

Breakfast - flax seed granola with blueberries and a splash of coconut milk, dandelion tea

Lunch - chopped salad, zucchini and onions with manchego and a bowl of carrot soup

Snack - 1 oz of 72% dark chocolate, 10 almonds and a pot of tea.

Dinner - 3 oz chicken, chopped, salad and vegetable timbale



Veggie timbale:
Layered vegetables with goat cheese topped with a little fresh parmesan cheese, baked for 30 mins at 400F
I used zucchini, slice length wise, red onion and chopped swiss chard.
The recipe called for shiitake mushrooms as well but I haven't been able to find those here.
I loved this dish - the goat cheese makes it really creamy and yummy.

    I'm sure you will be fine with Hula. I hate to admit that I have a serious T.V. addiction, so I would be going nuts right about now, lol! You're right to take advantage and get some reading done.

    I am sure Hula will work out for you both! Love the idea of more reading time though.

Wow the challenge went by fast! Can't wait ton hear the results!!! Your meals sound delicious and well balanced. I need to catch up on your blogs again. You have been motivating me with your current commitment to this plan ; )

By the way I pictured you enjoying that snack sitting somewhere sunny savoring the dark chocolate piece lol. I would have loved to have been there! Keep it up!

    Well, on the upside, think of all the money you will save! That is why we got rid of Direct TV. We started out at $29 a month, and they kept raising the rates. When it hit over $100, we pulled the plug...amazing how suddenly they could lower our rates if we would change are minds...we told them if they had valued us as customers, they would not have raised them to begin with. We are done with it. Netflix costs us $8 per month, and we find plenty to choose from.

    I would just be so upset if I lost my TV. I know it's not good being so additted to it but it is my friend and I still make sure I get up and walk around and get my 10000 steps in each day.
our tv is out of Canada. but also not legal...and not cheep.
