Because of my schedule, I've been wanting to keep lunches simple to make, pack, and eat on the go. I've found that a hearty veggie stew is a perfect fit. I don't even have to heat it up (sometimes I don't have access to a microwave). I can make it on Sunday, scoop the portions out into my five tupperware, and I am ready to roll. For my snacks, I have apples and baby carrots.
It's hard for me to accept this, but I am not superwoman,
. LOL. Once I got used to the idea that not every lunch was going to be different or that "gourmet," things have gotten a lot easier for me. It's making the rest of my life easier, too.
