I knew I would be off on my own for the weekend since I was going to a cowgirl retreat with some of my best friends. What I didn't know was how hard it would be to eat out 3 meals a day all weekend & keep myself in check!! I have to be cautious & eat from gluten-free menus, but there are still bad choices on those. The 1st day, I did really good until the event was over for the night & it was 10:30, we were all starving, & decided to head to the nearest place....ihop. On the website, they have a full gluten-free menu, including pancakes. Yep, another weakness of mine....duh, they get smothered in sweet syrup!!! Well, our waitress informed me real quick that they didn't serve anything except fruit that was gluten-free & the online options were on the corporate website. Hmmmm, eggs aren't gluten-free.......nope, apparently they add regular pancake mix to eggs to make them thicker---yuck!! Being the good sport that I am, I ordered a large fruit salad. Let me tell you, by breakfast the next morning, I was ready to chew off my arm! So, that day was off to a bad start & didn't get any better....I snacked A LOT all day. Yesterday I spent the day cleaning the house since my brother came to stay with the kids & my hubby comes home this week from work. Today, I woke up thinking about, guess what.....PANCAKES!! I foolishly thought I had some gf mix in the pantry, but alas, I don't. Tomorrow is grocery shopping day & guess what we're having tomorrow night for dinner.....yep, pancakes! I know it's crazy to obsess about something as silly as a flat breakfast food, but that seems to be how to get it out of my system....obsess about it while I run errands & exercise. If I wasn't required to eat gluten-free, it would be so much harder because I could just order them from a drive-thru, but I discovered this weekend that unless I cook them, i'll have No Pancakes!!
