First attempt at Batch Cooking - pics

Thank you again to everyone who has supported me - your comments make me smile & they help me keep going. I wish I had more time to comment, but I haven't! Everyone is so awesome - I love Spark!

Last night I worked an hour extra for work.. not too bad. I stopped at the food store on the way home and got some food. I was in the mood to cook. Since I have been feeling better, I have been trying to catch up on some of what I missed. I am trying not to over-do it, but I wanted to make some meals for this week. It took me 2 hours from start to finish - not too bad considering how much I made!

I made:
1. Turkey chili with beans, diced tomatoes, carrots, and green peppers.
2. Turkey Kielbasa with Shrimp with brown rice, fresh tomatoes, and green peppers.
3. Baked Whole Wheat Ziti with spinach, FF Cottage Cheese and ground turkey

I think everything came out pretty well! I froze most of the items. I even had some of each things as my dinner for last night. Yum!! Hopefully they turn out ok when I go to eat them again. I would like to try more types of meals I can freeze.. I think I want to try chicken next time. Does anyone have any recipes or ideas they would like to share? I was thinking about trying a slow cooker meal one time. Maybe chicken fajitas another time?

I signed up for another 5K - Sunday April 7th. It is only 5 minutes away from my house and on a Sunday so I couldn't resist! I just need to re-start my 5K training. It was funny - I told my parents I signed up for the 5K & I need to start running again. My Mom said to me " oh Good. I also need to use the treadmill again." My Dad was right next to her and said he needs to do the same thing! I said "Well, whoever starts using it first, needs to push the rest of us to start using it again!!" We all laughed because it is true - we all want to do it, but we can't seem to find that PUSH!





Hopefully everyone has a great rest of the day. My work day is half over already! I had a stressful morning, but I am alright now. I have lunch soon which is good. I am not sure if I am working late or not? Oh well. If I am here late, I am here late! Oh - the one older gentleman who works in my office complimented me today. He said "It still shows that you are losing weight. Keep up the great work." Other people ask if I am still losing weight, but I am glad some people still notice the difference. I really want the healthy weight to be healthy - but looking "better" is a bonus I will take!

Keep pushing toward your January goals! I got my 500 minutes for Jan so I am happy about that. I really wanted 1,000, but I did what I could with my health situation! I really need to push in Feb to be able to reach my healthy goal weight of 155!

  That entire menu sounds delicious. And the pictures look delicious, too. So many of our young friends don't enjoy cooking these days, so this blog is great to see.

    That's great that you did the batch cooking. It looks and sounds wonderful.

I sat down tonight and made up a menu plan for the next two weeks using foods that I have in the house. It feels great to know what we'll be eating. I only need to buy lettuce, tomatoes, cucumbers, peppers and an onion each week for the big salads that we eat for lunches on Monday through Thursday. The preplaning makes it easier to track the food in SP too!

I (finally) got my blog up with recipes the other day- first I posted it "disappeared" ... also check out 100daysofrealfood.com .... There is not a single recipe of hers that I havent loved!

I have found some spark recipes which freeze well. As I live alone I look for recipes which I can have a couple of servings of that week and then freeze the rest for later. I'll send you some of the recipes I like a little later.

    Well done on the batch cooking! I posted a blog the other day about Green Soup, and it is great for batch cooking. Another thing I like to do is to roast a whole chicken, use it for a dinner and then use the rest for chicken salad (make it with Greek yogurt and you can even add lentils and spice it with curry powder and raisins if you prefer), or chicken soup, or topping for green salads or filling for burritos or plain old leftovers. You could do a turkey breast if you don't like dark meat or dealing with all the bones.

    I cook about 3-4 SP slow cooker meals a week, they're great! I take them for lunch the next day too. It's great. I'm sure you can freeze half and eat the other half for different meals, or fix the recipe for smaller amounts.

Everything looks Great! Baked Whole Wheat Ziti with spinach, FF Cottage Cheese and ground turkey - sounds AMAZING! how did it turn out?

    Very interesting to see the pix and read about your adventures in batch cooking. I have been experimenting with cooking a turkey or a roast so I have meat to make meals with. I belong to a CSA so I have lots of veggies and can then use the meat to make stir frys, salads, sandwiches or soups.
It sounds like you are definitely on the right track to a healthier lifestle and your family is on board with you too. That is awesome. It is very encouraging when other people notice too. Congrats all around and run happy! emoticon emoticon emoticon

    All that food looks great! And if you are motivated to do batch cooking, take advantage of it! It makes meal planning and sticking to your nutrition goals so much easier when you get home late and can take something and just pop it in the microwave or oven.
