My tasty satisfying lunch

1/3 c egg beaters
1/3 c pico de gallo
1 TBSP sliced black olives
1/2 c torn baby spinach

Cooked together & placed on top on 1 slice natural ovens right wheat bread sprinkled with 1 oz sharp cheddar cheese!!

Sometimes I roll it up in a low carb tortilla instead

    emoticon everyone! I use substitute eggs if another meal that day will be slightly higher in fat & cholesterol. I also eat bananas, pineapple, watermelon that are great sources in potassium (though not as much as eggs.

    Looks good and probably tastes real good. But where do you get your potassium from. You gotta have potassium for good heart health.
