...since my last blog - over a month to be exact! A lot has happened in the past month. Family gatherings, stress at work, being down with the flu, and losing a bit of motivation has led me to a plateau.
For the past two weeks my husband and I have been trying to cook at home as often as possible. We actually did really well and only ate out on Friday night and Saturday morning (Subway) last week. It felt like a treat, rather than the norm. We actually talked about how proud we were that we have been eating at home and we stocked up our fridge with healthy snacks and dinner options. For us, we both work late many evenings or I go to the gym after work and don't get home until late AND the last thing either of us want to do is cook. We have been smart about preparing our vegetables by chopping, slicing, etc. on Sundays. This has really helped.
We are also BOTH eating breakfast every morning. We have set our alarms a few minutes earlier so that we can eat breakfast at home and not just throw a breakfast bar in our bag, but to eat oatmeal or eggs each morning. I can feel my energy levels increase as the morning progresses and I know it's because my body is properly fueled!
Exercising has been hard to get back into after the flu. I got off my schedule and I am working to get back to it. I spoke to an instructor at my gym and I am going to increase my cardio to 30 minutes (minimal) 5 days per week. I know I can do it because I was doing that and more before I got sick... I just have to get my groove back!
