so, I made something new for dinner tonight- pizza quesadillas. Someone on my facebook has posted a Pinterest pin for taco cupcakes, and as I was trying to view the recipe for those I came across pizza quesadillas. I have a ton of tortillas due to WIC, so I thought I'd give them a whirl since the kids love pizza.
They came out great, IMO. Of course neither kid will eat them as they're "new" and they are boobs. Oh well, I am not making them anything else so they're either eating or going to bed hungry.
Mine was yummmmy and I'd guess about 300 calories. I used two whole wheat tortillas that are 80 cal. apiece, f.f. mozz cheese (40 cal. for 1/3 cup), black olives (25 cal.), mushrooms (didn't count 'em) and about 8 pieces of turkey pepperoni (70 cal for 17 slices). You just spread a tad of sauce on each tortilla and then I dipped the quesadillas in the sauce, I just used plain tomato sauce since our pizza sauce had gone a bit funky. So, there were calories for the sauce of course but kind of hard to estimate as I was just dipping.
Anyway, I followed up dinner with a coconut popsicle which are like, my kryponite. 120 calories of heaven. I am pretty much done for the night and it's only 4:30! (Yes, we eat insanely early because of the children.)
No gym today, was coughing too much. Planning some floor exercises in a bit- crunches and whatnot.
