Pumpkin Spaghetti

Monday, January 28, 2013

I made spaghetti with kelp noodles (12 calories per serving), pumpkin puree, tomato, red onion, a sprinkle of nutritional yeast, oregano, salt and pepper (also, toast with pumpkin and pumpkin spice). It was really yummy! (sorry for the messy pic... I was really hungry)

Guess what I was eating as I read this post.......................pumpkin seeds. LOL The other day we were at the farmers market and I got a bag of raw, unsalted pumpkin seeds for snacks. Your dish looks MUCH better, but I will be content with mine. ;-)

I know Shiritaki Noodles are 20 calories per 4 oz. serving (I usually "splurge" on 8 oz!)

Never heard of kelp noodles. Is there a brand name?

Thanks for the info.
