This is my Spark blog?!! I can't believe it! I thought I had to set up a blog somewhere else and import it here in order to have my blog on Spark. The thought of having yet another separate blog or social network to keep track of really turned me off, but now that I know it's not such a fuss to do, I'll definitely be blogging here!
For my first blog entry, I'm going to plagiarize part of my own "introduce yourself" post from the Spark People Cookbook forum today...
I got the Spark People Cookbook a few days ago and tonight I made my first recipe: the fish packets on page 224, for two servings. Here's a picture:
I made a couple of modifications; instead of zesting the lemon, I just cut up a whole lemon and split it between the two packets. I also added a few cooked mussels and some medium green chiles. They were PERFECT!!!!! It's just like a special restaurant meal that my husband and I had to celebrate our anniversary last month, except healthier and MUCH cheaper (I'm a real bargain shopper and had purchased the fish earlier at an extremely reduced price. The whole meal cost me about £2/$3). I was nearly in tears by the third bite, I'm not even joking! It's just so satisfying to make such amazing food that's also so healthy!
The bottom line is, I love to cook and I want to eat WELL while losing weight. With the right planning and motivation, that is not impossible!
