My "At Goal and Maintaining" team has a challenge going on where we try a new recipe and post our review of it.
Collecting recipes is a bit of a hobby of mine. I have a large recipe file of my own, plus my mom's and grandma's recipe boxes. I have stacks of cookbooks, folders of clipped and copied recipes, several recipe boards on Pinterest, and collections of saved recipes on Spark. Perhaps I need professional help?!
Anyway, I decided that this challenge would be a great way to try some of these recipes I've been collecting. So last week I made "Ranch Marinated Chicken Breasts." Here's the recipe as I entered it into Spark Recipes: http://recipes.sparkpeople.com
It wasn't a particularly healthy recipe but I revised it to make it lower in calories. Our whole family loved it, including my fairly picky teenage daughter. I like the fact that it's quick, doesn't dirty a lot of pots and pans, and uses basic ingredients I have on hand. Plus, it's less than 200 calories per serving and has almost 30 grams of protein.
The leftovers were even better the next day! This is delicious cold in a wrap or salad, as well as reheated. A definite keeper!
