Well, I was concerned that last week would be very, very busy. Food challenge #4, Grilling, hasn't been completed yet, although I'm assured it will be tonight. (If it is, great. If not, I know it will happen when the timing is more convenient.) I do have to mention that last week was filled with several delicious meals including black bean burgers and vegetable-stuffed zucchini (using the same filling as the Cheesy Vegetable-Stuffed Eggplant). Both were awesome meals.
Thinking about these wonderful meals makes me realize (yet again) how grateful I am that MIRAGE727 has embraced this healthy lifestyle journey with me. I grew up in the midwest - if it wasn't meat and potatoes, it wasn't a meal. Now I eat very little red meat and I don't miss it. I'm amazed that I enjoy meatless meals, that I prefer and even crave all kinds of veggies and fruit. And through this transformation I feel the best I've ever felt and have more energy than I've ever imagined. Three years ago if you would have told me that I'd be doing half marathons and considering the Fight for Air Climb ( www.lung.org/donate/even
), I would have told you that you were crazy. I work hard (as most of us do); I'm glad I have the lifestyle that allows me to play hard has well.
So, this week is going to be easy. I'm craving some of Mirage's dishes that I love, and I'm hoping for some leftovers that I can bring to work with me. What's in my mind right now are things like Broccoli Woccoli ( recipes.sparkpeople.com/
) or CDM Spinach Chicken Strawberry Salad ( www.sparkpeople.com/mysp
), but I'm open to any of my favorites (Honey, you know what they are!) that Monty feels like making.
