Made a yummy bean soup yesterday for lunch from pinto beans I had in the freezer. I like to make them from scratch in large batches and freeze them. I had leftover taco meat and tomatoes already cut up so I added those along with some chopped carrots, celery and green peppers I froze from last summer's garden. I just love making soup on the weekends and cleaning out leftovers in the frig on a cold rainy day. Then I start the new week out with a clean frig and enough soup for lunch on Monday.
