some weeks i spend a lot of time surfing blogs, looking for inspiration, others i just rely on the fridge. we are in hawaii, so we have been eating a lot of salads, but DH said he still wanted soup, and.... it just so happened that i had the bones of my favorite green soup lying around the refrigerator - a dear friend in sweden once taught me that if you have a zucchini and a potato, you have soup. and sometime in the last day or so i saw a green soup recipe that used chard and broccoli - which i also happened to have in the fridge.
so… here is my clean out the fridge superb green soup:
1 tsp olive oil
3 cloves of garlic
1 stalk broccoli, step and head
1 baking potato
2 stalks celery
3 green onions
1 bunch chard including stems
5 cups broth (i used better than bullion vegetable broth)
1 tsp dijon mustard
saute the garlic in the olive oil, then add everything, cut up. bring to a boil then simmer until soft. i made this in the pressure cooker, which imho makes food taste even better than on the stove - 10 minutes in the PC, let cool naturally. use a stick mixer or blender to blend, season with dijon mustard, white pepper and thyme.
lots of green goodness to enjoy, with very few calories, but all of them good for you! this is the kind of soup that helps you get your veggies in, and also helps you feel full before a meal - and just plain tastes good...
