Some People Dream In Color....I Dream In Kitchen! LOL

I have been know to have vivid dreams. Years ago one of the physicians I worked with told me he always loved hearing my very entertaining, colorful dreams. LOL I think back then many of my dreams were powered by stress and a busy mind which was always trying to problem solve. Lately, my dreams are usually less colorful.

This morning, I woke up thinking that I had to make some spicy brown rice with beans. I mean.....I really had to! LOL

I think I know where this thought came from. Last week I made a pan of brown rice and packaged portions which I froze. My husband is not crazy about rice though he will eat it sometimes but it is not something I can offer him all that often. I had never tried freezing rice before but thought why not? The other day I pulled out a single portion to which I added some mushrooms and snow peas and served to myself with my chicken chop suey. Very good. Freezing didn't affect the quality of the rice and the convenience of having these single portions available to me is a real winner.

So today I was planning on making some turkey tacos. One of my husband's favorites. And since my mind was already thinking in that spice family, the rice was a natural.

Now, I used to toss onion, peppers and rice (white back then) in a pan, sauté with some cumin, dried chilis, oregano and taco seasoning or a combo of chili powder and or paprika then rotel tomatoes with chili pepper and some water and cook till done. This is basically what I did today subbing brown rice and as the cooking continued, I tossed in some rinsed and drained canned beans. So good. Well, still isn't something my husband would want but I again portioned it and froze the portions so I really don't care if he isn't going to try it. Now I'm thinking how nice it will be to take some of this out and stir in maybe shrimp or other fish...mmmmm....tilapia with salsa. Or maybe a little sliced chicken anduille. Yeah I do like me spices! LOL

So now you know. I dream in kitchen! emoticon

    You could try making Cozy Comfort Chili with Turkey instead of ground beef. I think that would freeze well.

    Love the idea of freezing the cooked brown rice, which Erik is "forced" to eat with me. Actually his diet calls for brown rice so he's not arguing as much as in the beginning. In fact he's looking for healthier foods. YAY! I don't do too spicy but you are giving me some ideas to jazz up our meals. Erik likes black beans, hot sausage and brown rice and he loves fish.
    I think I can do that with whole wheat pasta if I under cook it a little, I hate pasta mush!
    Kitchen dreaming sounds like a plan if you come up with healthy stuff!

    I freeze rice all the time. It is a great time saver and can be used in so many different ways. I do the same with barley and use it interchangeably with the brown rice for a slightly different taste an texture.

    P.S. i also dream vividly in color!

    You might have enjoyed the chicken wild rice soup I threw together for our supper. I decided to add some cajun seasoning and got a little heavy handed. SPICY indeed. LOL
