Found a fantastic sounding recipe
Can't wait till it is done
Chicken Coated in Pork rinds
I crushed pork rinds and mixed in salt pepper basil oregano onion and garlic powder and paprika.
I coated the legs and thighs in that and then dipped them in an egg and cream mixture. and then coated again in seasoned pork rind mix.
and then drizzled them in butter
I am baking uncovered at 375 for approx 80 min
Note to self: Although this seems a paleo approved recipe, it's not for me. I have one leg and one thigh some asparagus carrots and broccoli. I have had a stomach all night, maybe it is to much dark meat or to greasy or the pork rinds I shouldn't have eaten since I haven't eaten pork for 15 years. Anyway that experiment is over and hubby can eat the leftovers. I'll try to find a salmon recipe for tomorrow
