Stumbling out of bed at 4 AM to let the pups out, I noticed things looked a little "white" outside. I knew we were supposed to get snow Friday, but this was an extra treat!
So I found myself thinking about some recipes I found on blogs recently that I wanted to try. Today is the perfect day!
Brownie Protein Muffins (adapted from Petite Athleat)
Makes 11 muffins
2 scoops protein powder ( I used Vega chocolate)
1 Tbs cocoa powder
1 tsp baking powder
1 tsp baking soda
2 Tbs almond flour
2 egg whites
1/4 cup almond milk
1/4 cup water
2 medium bananas
Mix all, scoop into greased muffin tins. Bake 20 minutes on 350.
I topped mine with PB2 frosting and walnut halves.
The original recipe called for 1/2 cup oats and 1/2 cup Fage. I don't like either so I omitted, which might be why I only got 11 muffins.
