A few weeks ago I got tired of opening so many bags of frozen veggie when I wanted to mix them so I got them all out. Mixed them and put them back in one bag.
It made for a 56 calorie/cup mixture.
Another trick I have is placing one cup of spinach on a plate before putting food on it. It adds one serving of veggies and only 7 calories.
This was a plate of 2 cups mixed frozen veggies. 1 cup spinach, 2 farm eggs and some canned beets from my 2012 garden. One half a SW burger pattie from my January 22 blog.
Very tasty and healthy meal. It came in at 330 calories/27 iron/10 fiber/39 carbs/11 fat.
I think a splach of lemon juice over the spinach before loading the plate up would be a nice touch.
First I microwaved the veggies while heating up a fry pan. Add veggies and poach the eggs over them. Cover fry pan at this point. I should have added onions as it's my favorite. Meanwhile, add spinach and beets to the plate. Top with veggie mixure.
